Unrefined

What does unrefined sea salt mean?

During refining, salt is dissolved, purified and recrystallised. What remains is almost pure sodium chloride, often with an added anti-caking agent so it doesn’t clump. That is how most supermarket table salt is made.

Unrefined sea salt skips this step. Our coarse sea salt from Nin is made by letting seawater evaporate in shallow pans. The salt is harvested by hand and dried by the sun and wind. The ingredient list has just one item: sea salt.

Information about Coarse Sea Salt from Nin – Unrefined, 500 g

About the product

The Nin salt pans

The Nin salt pans lie in a shallow lagoon near the town of Nin, north of Zadar on the Dalmatian coast. Salt has been produced here since antiquity. After a break of several centuries, the salt works reopened in 1954 and still operate traditionally today: seawater evaporates in shallow pans, the sun and the bura wind from the Velebit mountains dry the salt, and it is harvested by hand.

How our unrefined sea salt is made

Seawater from the lagoon flows into shallow pans. There it evaporates under the sun and wind until the salt crystallises on the bottom. The salt workers harvest it by hand and leave it to dry in the open air. There is no refining.

Coarse sea salt for your grinder and cooking pot

The coarse crystals are ideal for the salt grinder and anywhere the salt dissolves anyway: in cooking water, in sauces, in salt crusts. For finishing dishes, we offer our fleur de sel from the same salt pans.

Frequently Asked Questions (FAQ)

What is coarse sea salt used for?

For the salt grinder, for pasta and potato water, for salt crusts on fish or meat, for pickling and for roast vegetables.

What is the difference between coarse and fine sea salt?

Only the grain size. Coarse sea salt is freshly ground in a grinder or dissolves during cooking. Fine salt is sprinkled straight on.

Can I use this salt in any salt grinder?

Coarse, dry sea salt is suitable for salt grinders. A ceramic mechanism works best, as salt can corrode metal. Our wooden salt grinder from Solana Nin is a perfect match.

Why is there no anti-caking agent in this salt?

Because it is unrefined and consists of nothing but sea salt. In high humidity it can therefore clump a little. Stored dry, it stays free-flowing.

Is this sea salt iodised?

No. It is 100% sea salt, with no added iodine.

What is the difference between coarse sea salt and fleur de sel?

Coarse sea salt crystallises at the bottom of the salt pans. Fleur de sel is the delicate layer that forms on the surface of the water and is skimmed off separately by hand. Coarse sea salt is for cooking and the grinder, fleur de sel for finishing dishes.

Where does this sea salt come from?

From the Nin salt pans in a lagoon north of Zadar on Croatia’s Adriatic coast. Salt is still harvested there traditionally, by hand.

What does unrefined salt mean?

Refined salt is dissolved, purified and recrystallised, and an anti-caking agent is often added. Unrefined sea salt skips this step: seawater evaporates in shallow pans, and the salt is harvested by hand and dried by the sun and wind.

How should I store sea salt?

Dry and tightly sealed. Salt does not go off.
