Dried beef pancreas is freeze-dried tissue of the bovine pancreas, finely ground and filled into capsules. In our product the pancreas comes 100 % from organic pasture farming and makes up 80 % of the content; the remaining 20 % is organic liver. This makes an organ accessible that you can hardly get from the butcher any more: pancreas capsules, neutral in taste and precisely dosed.
Which nutrients does dried beef pancreas with liver contain?
- Vitamin B12: Organ meats are among the most natural sources of B12. Vitamin B12 contributes to the normal function of the nervous system, to normal energy-yielding metabolism, to the reduction of tiredness and fatigue and to normal red blood cell formation.
- Vitamin A (retinol): The organic liver adds natural vitamin A as ready-to-use retinol, not as beta-carotene. Vitamin A contributes to the normal function of the immune system, to the maintenance of normal skin and to the maintenance of normal vision.
- Copper: Copper contributes to the normal function of the nervous system, to normal energy-yielding metabolism and to the protection of cells from oxidative stress.
- The organ’s own enzymes and proteins: As a gland, the pancreas naturally contains the enzymes it produces, including lipase, amylase and trypsin, as well as proteins and peptides. They are part of the organ’s natural matrix, not added and not standardised.
All of these components are present in their natural food matrix, together with the co-factors they occur with in nature, rather than as isolated, synthetic single substances.
Why combine pancreas and liver?
The pancreas is an organ with a profile of its own that has practically disappeared from the modern diet. The liver complements it with its high density of vitamin B12, vitamin A and copper. The result is an organ complex that covers more than either organ on its own, inspired by traditional nose-to-tail eating.
Pancreas in traditional cooking
Traditional diets almost always used the whole animal, and the glandular organs were often regarded as particularly valuable. In classic European cooking, the pancreas of young animals was prepared as sweetbread alongside the thymus. Today these organs hardly ever end up on the plate. Our capsules bring the pancreas back into the diet without you having to source or prepare it yourself.
Why freeze-dried?
Freeze-drying removes water from the pancreas and liver at very low temperatures without heating them. Unlike heat-dried organs, heat-sensitive components are largely preserved. What remains is the concentrated nutrient density of fresh organ meat: shelf-stable, odourless, neutral in taste and precisely dosed.
Quality and purity from organic pasture farming
Our beef pancreas comes from organic pasture farming in Estonia. The cattle are grass-fed and raised under organic standards. Each capsule contains only freeze-dried pancreas and liver, with no synthetic additives, anti-caking agents, fillers or colourings. As an EU organic product, the organs are subject to regular quality controls, and we additionally have them lab-tested for nutrients and purity (see “Lab analyses & certificates”).
Who are pancreas capsules for?
Pancreas capsules are for anyone who wants to round off a nose-to-tail diet with rare organs that are hardly available in shops any more. They suit people who prefer whole foods over synthetic single supplements and offer a simple way to get natural vitamin B12 from real food.
